Shortbread Cookies

This is a very simple, versatile dough.  On it's own it's a bit bland and the dough is undersweetened because more flavor and sweetness will come from your icing/jam/topping of choice.  

If you wanted these to be a plain un-icing'd cookie, just increase the sweetener (maybe another 3-4 Tbsp) and add a bit more extract.
