The reason for the fresh, cracked eggs? A lot of restaurants, particularly diner-type restaurants, have a trick to make omelettes light and fluffy. The trick? Pancake batter! They mix pancake batter in with eggs to make the omelette light and airy. But this can wreak havoc on a diabetics blood sugar, especially when they're not expecting it! So, always ask to be sure!

New Diner for Breakfast
We
tried a new diner for breakfast today. I ordered the kids ham, bacon,
sausage, and cheddar omelettes and Samuel had tomato in his. Right after
I ordered I realized I didn't verify if they make their omelettes from
scratch with cracked eggs so I quickly found our waitress to confirm
that they do use fresh eggs. Whew! This is the biggest omelette I've
ever seen - probably 4 eggs and a huge amount of cheddar cheese ~ it was
easily 1 lb!

Low Carb Souffle
White cheddar souffle courtesy of my hubby so I could have a night off from cooking.
He uses this recipe. Gluten Free Miracle Souffles He always uses cream cheese, but mixes up the other two cheeses. As long as you use the same total (18.5 oz) it always turns out great.

Easy Sausage Muffins
These muffins were super fast and easy. I browned 2 lbs of breakfast sausage. While that was browning, I mixed up 2 batches of my "corn"dog batter recipe. After the sausage was browned, I added it to the batter, and mixed to combine.
Fill lined muffins tins - I got 30 muffins. Bake in a 375° preheated muffin for 20 minutes.
I served with some sugar-free pancake syrup for dipping and a salad.
And now we have leftovers for lunch and dinner. These would be great for fast breakfasts or packed in kids lunches.

Sausage & Egg Ham Cups
I've posted smaller versions of these before, but I made these much larger using a hamburger bun pan.
I lined the pan with 3-4 thinly sliced pieces of ham. Then filled that with browned sausage. Then I beat 7 eggs with salt & seasonings, and topped each of the ham cups. If you're not dairy-free you could top with cheese too.
Bake at 400° for about 25 minutes or until the eggs are set.
After cooked, each one of these weighed about 5.5 oz. This is perfect for us at dinner. Dinner is Samuel's lightest protein meal to avoid protein highs over night.
These were a really substantial meal and very satisfying. My husband thought they'd be great for camping or hiking wrapped in foil. The kids also split one for a snack the next day.

Fast Unplanned Dinner
Thursday night is my daughter's dance class, so we go out to eat and I get a night off cooking. She's been under the weather today and decided she didn't feel well enough to go (nor did I want to get other kids sick).
Unfortunately, I didn't have anything prepped for dinner. But I did have some carrot "apple" salad made. And some zucchini bread in the freezer that I toasted. And some pre-cooked breakfast sausage from Costco that I browned in a skillet. Throw in some scrambled eggs, and we have a fast, filling, low carb dinner.
About 6 net carbs.

Breakfast Saved with 90-second Bread
Every Sunday my husband makes open faced egg sandwiches. I didn't get around to making my Rustic Faux-Wheat Bread yesterday and we're completely out (GASP!). So, I used my '90 second cake' recipe and reduced the vanilla and sweetener so it would be more bread-like. Breakfast was saved!
The kid's breakfast was the bread (each has half), 2 eggs, bacon, no sugar added ketchup, blueberries with coconut cream, unsweetened vanilla almond milk, and 2 oz veggie juice...
I'm not much of a breakfast person. I fast through breakfast during the week, but eat it on the weekends just for the family time. I had my 90-second bread split... 1 egg, bacon and hot sauce on one side. Butter and sugar-free orange marmalade on the other. And coffee.
Use the search feature on the right side of the blog... Search "90 second" for the cake/bread recipe.

Flavored Yogurt
I've been using flavored oils a lot more to add flavor to foods (baked goods, yogurt, ice cream, etc).
Yesterday the kids had "banana" yogurt for the first time with no added carbs.
I used Walden Farms pancake syrup as my 0 carb sweetener, but stevia, monk fruit, etc would work just fine. I add about 8 drops of the oil per 1/4 cup (56g) of yogurt and mix well.
The sky's the limit on flavored oils... there are a 100+ flavors out there.

Sausage Gravy & Egg Breakfast Pizza
• Crispy Low Carb Pizza Crust. Used sage as the spice (search blog for pizza crust).
• Top with sausage gravy. I cook it to reduce it down so it's quite thick. (search blog for sausage gravy)
• Bake at 400° for about 8-10 minutes until sausage gravy is a bit bubbly.
• Top with over easy eggs (or however you like your eggs) and crumbled bacon.
I make the pizza crust and the sausage gravy the day before to make quick assembly in the morning.

Bacon Steaks
A bonus of living in a farm and raising your own pigs? Bacon as big as your hand. I call these bacon steaks.
I encourage everyone to find a local farm for your meat source. Visit the farm, look around and ask questions... what ingredients are in the meat, do the animals look clean and happy?
Bacon, eggs, hot "cereal", plain yogurt with Walden Farms strawberry syrup, iced vanilla latte. 6 net carbs.

4th of July Breakfast
Dirty sunnyside up eggs (from our farm)
Bacon (from our farm)
Full-fat yogurt with Walden Farms 0 carb strawberry syrup and tart, wild blackberries (from our farm)
Samuel hasn't had yogurt in about 2 years. It was a food we simply had to remove because we couldn't prevent a spike. He's grown and things change though. In an effort to get probiotics into him, were giving it another go. We adjusted other foods so his breakfast is still 6 net carbs including the yogurt. I'll report how he does.
Note: he dug into his breakfast too quick so this is my plate. His was 1 bacon, 2 eggs, half the amount of yogurt shown here (1/4 cup or 57g, syrup and just 1 blackberry), 2 oz veggie juice.
We will repeat this exact breakfast as many times as necessary to nail his bolus down..... or decide if he still can't do yogurt, if it comes to that.

Breakfast On-the-Go!
Sausage, egg and cheese breakfast sandwiches.
☆ I use my Rustic Faux-Wheat Buns, sliced. (Two pieces of my herbed flatbread works well too!)
☆ Make up some large 4oz sausage patties (tip: grill them outside to keep your kitchen clean!)
☆ Top with a fried egg and cheese.
☆ Wrap up in foil and throw in the freezer. Pull out as needed and microwave for a couple of minutes (sans foil, of course).
Great for camping breakfasts too, which is mostly what I make these for. Very filling since each Rustic Faux-Wheat Bun is equivalent to 2 slices of bread.
3 net carbs.

Hot Buttered Sweet "Rice"
Growing
up my Mom would serve leftover rice heated with sugar, cinnamon, milk
and butter. It was like a hot breakfast cereal to us. And it was
delicious! I haven't thought of this in years since going LC, but the
other day I was grocery shopping with my T1 sister and was showing her
plain riced cauliflower. She asked if it would work to make Mom's rice
cereal. "Huh! I don't know!" was my reply.
Well now I do. Yes, it does! This could probably even be a super fast dessert!
1/2 cup cauliflower rice (unsalted, steamed until soft, about 6-7 minutes)
1/4 - 1/3 cup unsweetened vanilla almond milk
1 - 2 Tbsp heavy cream
1-2 tsp 0 carb sweetener (or to taste)
1-2 tsp SF vanilla syrup (Torani or Jordan's)
1 tsp of butter
Dash of cinnamon
Heat for about 45 seconds.
2 net carbs just from the cauli rice.

Waffles and Pancakes
We've tried a lot of low carb waffles and pancakes over the years. The problems we've found are...
1) they aren't very crispy or tasty
2) recipes often utilize whey protein powder which is very spikey to Samuel, even in small amounts
3) recipes often use yogurt, which again, can be a challenge to maintain normal blood sugar
This recipe was created by my husband and are by far the BEST low carb waffles and pancakes we've come across. They also happen to be dairy-free. Some people worry about the number of eggs in the recipe thinking they will be "eggy" tasting... I promise they're not!

Easy Muffins
Unlimited possibilities!
This particular recipe pictured is my basic breakfast muffin recipe with 7 carbs worth of PB mixed in. Walnut meal (crushed walnuts) mixed with a little sweetener on top. Other ideas are blueberry, lemon (extract) cinnamon pecan, and lemon poppy seed. 2 net carbs each. Mix in or top with whatever suits your fancy.
The rceipe calls for butter, but you can easily make these dairy-free! To swap 1 stick of butter substitute with 194g (7 oz) of refined coconut oil.
