This particular recipe pictured is my basic breakfast muffin recipe with 7 carbs worth of
PB mixed in. Walnut meal (crushed walnuts) mixed with a little
sweetener on top. Other ideas are blueberry, lemon (extract) cinnamon pecan, and lemon poppy seed. 2 net carbs each. Mix in or top with whatever suits your fancy.
The rceipe calls for butter, but you can easily make these dairy-free! To swap 1 stick of butter substitute with 194g (7 oz) of refined coconut oil.
