Color Coded Insulin

If you use several different types of insulin like we do, it can be easy to accidentally grab the wrong vial, and in some cases that could be deadly.

After 7 1/2 years of Type 1 Diabetes, we recently made our first "dosed the wrong insulin!!" mistake.  We're human and it's bound to happen. We monitored him diligently, treated to correct it, and it really wasn't too bad.  But after that, I decided to spend about 20 minutes on a craft project to help us visually see the insulin were picking up more clearly.  Especially when you're doing a 2am correction half asleep. 😴

I may end up redoing this, but for now I like it.  Three of the four colors match the colors on insulin box for consistency-sake.


I just used some basic office supplies and the boxes the insulin came in.


Here's to hoping we make AT LEAST another 7+ years before we do this again!

0 Carb Homemade Sno-Cones

We sometimes go out for Sno-Cones... I just order plain shaved ice and add our own syrup (Jordan's sugar-free syrup that I carry in a recycled ketchup squirt bottle).

But we were at home and the kids wanted Sno-Cones.  I added a few handfuls of ice to my Blendtec and used the "ice crush" setting. It made PERFECTLY FLUFFY shaved ice.  I was totally shocked.  I honestly don't know if this would turn out as well in a blender that wasn't a Blendtec or a Vitamix, but it'd be worth a try!

We just topped with our Jordan's syrup like usual.

Pre-Flight Meal

I'm at the airport having a pre-flight meal at Chili's.  I ordered a 1/2 pound guacamole burger, no bun.  It came topped with provolone cheese, a side of guacamole, a spicy lime aioli sauce, sauteed peppers and onions, and pickled jalapenos.  I'd definitely get it again.

Oh, yeah, and a glass of wine, despite being 11am.  No judgement allowed.

Rum Banana Cream

Who else could use a cold, refreshing adult beverage this summer?  🙋

I love summertime drinks, but I don't like compromising on carbs.  I saw a bottle of banana cream in the grocery store and scanned it using My Fitness Pal to find out the carb count.  12g for 1.5 oz.  Hmm... I didn't like that.  Then this idea popped in my head!

Mix in a shaker (or Mason jar in my case)...


2oz rum
2 oz unsweetened almond milk
1.5 oz heavy cream
1 oz sugar-free vanilla syrup
15 drops banana extract or oil
Shake with ice.  Serve over lots of ice and enjoy!

Has approx. 2 carbs from the heavy cream.  Great drink for sitting outside, in the hot tub, or by the pool!

Magic Shell on Everything!

Low Carb Magic Shell might be my downfall.  I seriously love this stuff.  Today is dessert day and we just had ice cream, but I wanted to dress it up.

A couple of days ago I made a big batch of low carb "candied" walnuts.  I put some in the freezer to get cold.  Then I dipped them in the Magic Shell and put back in the freezer for a minute.  Repeated to get a good coating.

Dish out your favorite low carb ice cream.  Drizzle Magic Shell on top and stick in the freezer for 30 seconds.  Top with low carb whipped cream and your chocolate coated "candied" walnuts and viola!  Dessert is served!  🍧

Chocolate Magic Shell

Here's how I make "candied" walnuts:

I makes this in big batches!  Add walnuts, Walden Farms pancake or maple walnut syrup (or your favorite syrup), birch xylitol or Swerve, and cinnamon (to taste). Stir and bake at 300 degrees for about 20 minutes.  Cool and store in a bag. We use for snacks, salad toppings, dessert toppings, etc.
