LC Ice Cream at the Park

Ate an early lunch out (first time my kids have ever been to McDonalds!). Then to see a movie (another first). Picked up a pint of sugar-free, low carb ice cream and shared it while playing at the park. I need to start spending more Saturdays out with the kids like this!

Store-Bought Rotisserie Chicken

I haven't bought a grocery store rotisserie chicken in about 7 years. We stopped eating them because we prefer to raise our own meat and I wasn't sure if the brine/marinade would spike Samuel's blood sugar.

Today the kids and I were out all day so I decided I would give it a try. I never realized how country my kids are and how little processed/ready-made food they've been exposed to. This was an actual conversation today:

Me: I need to get one last thing... a chicken for dinner.
Samuel: They sell chickens here?!?
Me: Sure.
Samuel: Why are we buying one?
Me: It will be past dinnertime when we get home so I want a fast meal.
Samuel: Well, how will we have time to butcher and cook it then?
Me: Huh???
Samuel: Uhhh... is the chicken alive?

I busted out laughing and took them to the rotisserie chicken counter where they stood in amazement that you could buy a chicken to take home cooked by someone else!
I'm not sure if I should be proud or concerned.

On a good note, 3 hours postprandial his BG is 81.

UPDATE
The chicken was fine all night...no odd spikes. No CGM alerts all night so he stayed within a 68 to 105-115 range all night.

Traveling Snack Hack!

Whole Foods keeps me on LC track when traveling.  I always scope out a Whole Foods and stock up on things I can easily carry with me.

Meat sticks - 0 carbs, no sugar
Epic pork rinds, 1 carb, no sugar
Lots of Lily's chocolate! - carbs vary, but are low
Water kefir - 10 carbs per bottle. I divide it into 4 servings!

I often order this at Starbucks and watch closely to make sure they make it right. It throws baristas off in some cities, but not in Seattle! Woo hoo for no strange looks!

Semi-Homemade Dessert

There used to be a show on the Food Network called Semi Homemade which was a mix of store-bought and homemade items. This dessert is kind of like that.

At 11am today I realized I never made a dessert for "Dessert Day". I threw together the fastest cookie recipe I have (Coconut Butter cookies, you can search the blog for it) and stuck them in the freezer as soon as they were done to cool.
I pulled out my emergency stash of Enlightened Butter Pecan Ice Cream to soften.
I put squares of plastic wrap on the counter, add the cookie bottoms, add the ice cream, then the cookie top and wrap tightly in the plastic wrap. Put back in the freezer.

5 net carbs and ready by lunch. Whew!



Mexican Skillet Dinner

I used the recipe below with some edits. I omitted onions because they are evil on Samuel's blood sugar (seriously, it might as well be glucose!). I also omitted the tomatoes because cooked tomatoes don't work well either, but he can do raw tomatoes ok. So I just served this over lettuce with salsa and sour cream. I meant to add avocado, but, uh, I just realized that I forgot. Oops... next time!

4th of July Breakfast

Dirty sunnyside up eggs (from our farm)
Bacon (from our farm)
Full-fat yogurt with Walden Farms 0 carb strawberry syrup and tart, wild blackberries (from our farm)

Samuel hasn't had yogurt in about 2 years. It was a food we simply had to remove because we couldn't prevent a spike. He's grown and things change though. In an effort to get probiotics into him, were giving it another go. We adjusted other foods so his breakfast is still 6 net carbs including the yogurt. I'll report how he does.

Note: he dug into his breakfast too quick so this is my plate. His was 1 bacon, 2 eggs, half the amount of yogurt shown here (1/4 cup or 57g, syrup and just 1 blackberry), 2 oz veggie juice.

We will repeat this exact breakfast as many times as necessary to nail his bolus down..... or decide if he still can't do yogurt, if it comes to that.

Gooey Butter Pie

It's been a long time since I've had Gooey Butter Cake and this has a little different texture since it's a pie, but definitely had the same feel. It's a cross between a cheesecake and custard.

I used birch xylitol in mine instead of the stevia blend. I also reduced the sweetener in the filling to half a cup and it was plenty sweet.  3 net carbs.
