Beef Enchiladas!

Super easy and mostly all protein.  

Make some seasoned taco meat and set aside to cool a bit.  Lay out turkey lunch meat (2 pieces together if it's thin). Add half a piece of cheese (I use American) and a scoop of the taco meat. Roll up and put on a parchment lined baking sheet. Top them all with salsa and shredded cheddar. 

BakeaBake 350°F for 20 minutes.

I serve with guacamole, sour cream, and more salsa on the table.

Pan-seared Scallops

This is the type of meal I could eat just about every day. Scallops pan-seared in butter, pork rinds & onion dip, and left over Valentine's Day cake. 😋 

I get my pan rippin' hot, add butter and a little olive oil, and sear on one side for 3 minutes. Flip and add a little seasoning to the seared tops. Cook another 1 ½ minutes, and they're done.

Very low carb, but high in protein. 💪

Low Carb Homemade Mushroom Soup

I don't really have a measured out recipe for this ~ I just wing it as I go. It's super easy though so thought I'd share the basic idea.

Saute about 2 cups of sliced mushrooms of your choice in butter medium on heat until slightly soft ~ about 5 minutes. Add about 1 tsp minced garlic and ½ tsp onion powder and cook for about 30 seconds. Add about 1 cup heavy cream and 1 cup unsweetened almond milk (or whatever mushroom to sauce ratio looks right to you). Keep simmering until it thickens up ~ about 10 -15 minutes.  Turn heat off and stir in about ¼ cup parmesan cheese until melted.  Season with salt & pepper to taste.
