Low Carb Gravy

Okay, this obviously isn't a meal itself, but it can be important to know how to make low carb, especially around holidays. Most gravies use flour or cornstarch to thicken it which is a lot of sugar. Here's how to make super low carb gravy.

Pour 2 cartons of LC beef/pork/chicken stock in a saucepan pan and bring to a simmer. Season with salt and pepper. I add a little half and half or heavy cream... 1/4 - 1/2 a cup. To thicken, sprinkle 1/2 tsp of xanthan gum right on the gravy and whisk like crazy!! Once incorporated, add another 1/2 tsp of xanthan gum and keep whisking like crazy. It usually takes 2 1/2 tsp. Error on the thin side. .. it will thicken up quite a bit as it cools and can turn gummy if you add too much. It is called xantham GUM after all. The gravy reheats well too.

Carbs should be minimal, if any. Only what was in your stock or half & half or cream.


Hot Buttered Sweet "Rice"

Growing up my Mom would serve leftover rice heated with sugar, cinnamon, milk and butter. It was like a hot breakfast cereal to us. And it was delicious! I haven't thought of this in years since going LC, but the other day I was grocery shopping with my T1 sister and was showing her plain riced cauliflower. She asked if it would work to make Mom's rice cereal. "Huh! I don't know!" was my reply.

Well now I do. Yes, it does! This could probably even be a super fast dessert!

1/2 cup cauliflower rice (unsalted, steamed until soft, about 6-7 minutes)
1/4 - 1/3 cup unsweetened vanilla almond milk
1 - 2 Tbsp heavy cream
1-2 tsp 0 carb sweetener (or to taste)
1-2 tsp SF vanilla syrup (Torani or Jordan's)
1 tsp of butter
Dash of cinnamon
Heat for about 45 seconds.

2 net carbs just from the cauli rice.


Pots de Creme

This is a cross between a pudding and a mousse. Super easy to make, but needs some time to setup in the fridge.

My CGM Experiment

Samuel's last 6 hours on top, mine on the bottom. Almost identical! We both even had almost the same bump right after lunch. Pretty cool!

Coconut Butter Cookie Cream Sandwiches

Fill with whipped cream or LC ice cream and freeze. Cookies are great by themselves too.

Hot Breakfast "Cereal"

We mix up a big batch of the dry ingredients so we can quickly make this for breakfast.



Waffles and Pancakes

We've tried a lot of low carb waffles and pancakes over the years.  The problems we've found are...

1) they aren't very crispy or tasty
2) recipes often utilize whey protein powder which is very spikey to Samuel, even in small amounts
3) recipes often use yogurt, which again, can be a challenge to maintain normal blood sugar

This recipe was created by my husband and are by far the BEST low carb waffles and pancakes we've come across.  They also happen to be dairy-free.  Some people worry about the number of eggs in the recipe thinking they will be "eggy" tasting... I promise they're not!

Easy Muffins

Unlimited possibilities! 

This particular recipe pictured is my basic breakfast muffin recipe with 7 carbs worth of PB mixed in. Walnut meal (crushed walnuts) mixed with a little sweetener on top.  Other ideas are blueberry, lemon (extract) cinnamon pecan, and lemon poppy seed.  2 net carbs each. Mix in or top with whatever suits your fancy.


The rceipe calls for butter, but you can easily make these dairy-free! To swap 1 stick of butter substitute with 194g (7 oz) of refined coconut oil.
